                        In a medium saucepan, bring quinoa and water to a boil.

                        Reduce heat, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is tender. Fluff with a fork and let cool.

                        In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, and mint.

                        In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
